Lobster Cleaning

Remove the tail from the lobster body by rolling tail in, then grab tail
and body at carapace and twist in opposite directions and pull apart.
To remove intestinal vein break off about half the antenae. Stick the broken
end of antenae in the anal hole. Push in, twist and pull antenae out to
remove the vein. Roll lobster tail and freeze if desired.
To split lobster tail lengthwise, lay tail with back facing up. Carefully
pierce back of shell with stiff knife and force down to split in half.
Remove vein if not done prior.
